OAS-11512 RBAC update for Platform Monitoring

Note

Expand platform-operator RBAC to include EndpointSlices and Ingresses across all chart variants.

• RBAC (platform-operator Role updates):
  • Grant access to discovery.k8s.io endpointslices with get, list, watch.
  • Grant access to networking.k8s.io ingresses and ingresses/status with get, list, watch.
  • Applied to:
    • chart/kube-arangodb/templates/platform-operator/role.yaml
    • chart/kube-arangodb-arm64/templates/platform-operator/role.yaml
    • chart/kube-arangodb-enterprise/templates/platform-operator/role.yaml
